This one came courtesy of our own lovely Spahten Jessica Wohlen. She found this one when she wanted to bring a dessert that I can eat. I will tell you – this is AMAZING! We definitely put a hurting on this dip. The recipe comes from Paleo Parents (http://paleoparents.com/featured/monster-cookie-dough-dip/). This has been made with coconut oil in place of the palm oil and it was really good. Now this is a break away from our usual healthy recipes, this one is decidedly kid-friendly and would be a great addition to a NYE party.
Paleo-ized Monster Cookie Dough Dip
Ingredients
- 2 C blanched almond flour
- 1/2 C palm shortening
- 1/4 C honey (we used wildflower that was not raw for the loose texture and flavor, but you could use any really)
- 1/4 C maple syrup
- 1 Tbsp vanilla extract
- 1/2 tsp salt
- Optional topping: 1/2 C finely diced dates
- Optional topping: 1/2 C finely diced cashews, walnuts or macadamia nuts
- Optional topping: 1/2 C dairy-free chocolate chips
- Optional topping: 1/2 C SunSpire chocolate candies (not dairy-free)
Instructions
- ♥ Combine all ingredients, except the optional ones, in a bowl until well incorporated.
- ♥ Fold in the “toppings” of your choice.
- ♥ Transfer to a serving bowl, top with a few extra toppings (for flare).
- ♥ Eat with the dipper of your choice!
Serves a ton. Although this can sit out for quite a while, store long-term chilled. Let this come to room temperature before serving – the palm shortening will harden once chilled. We recommend pairing it with apple slices, but maybe you have a better idea? Just don’t put spoons in the same room, because you’ll be sharing germs with double dippers in no time!
If you have a nut allergy, or are looking to reduce the sugar content, try the following (completely untested) version and let me know how it goes!
- 1 C coconut flour
- 1/2 C SunButter (or TJs brand)
- 1/2 C apple sauce
- 1/2 C palm shortening
- 2-3 T honey
- 2-3 T maple syrup
- 1 Tbsp vanilla extract
- 1/2 tsp salt
- Optional topping: 1/2 C finely diced dates
- Optional topping: 1/2 C finely diced cashews, walnuts or macadamia nuts
- Optional topping: 1/2 C dairy-free chocolate chips
- Optional topping: 1/2 C sunspire chocolate candies (not dairy-free)
Whatever you do, this “choose your own optional topping” dip is hard to mess up. Little friends joined me in the kitchen who don’t usually cook, and they were thrilled to help with every step of this recipe. So quick & easy, who’s going to complain about that?!
